GARDEN PATCH PASTA SALAD RECIPE:
Ingredients:
- 10 oz. vermicelli or other pasta (uncooked)
- 1/4 c. Italian dressing or 2 Tbsp. olive or vegetable oil
- 2 Tbsp. wine vinegar
- 1 clove garlic, crushed or minced
- 1 tsp. oregano leaves
- 1 tsp. celery seed
- 1/2 tsp. basil
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. fresh broccoli, chopped
- 1 green pepper, chopped
- 1/2 c. chopped red onion
- 1 c. mayonnaise
- 1 Tbsp. chopped fresh parsley
- Radishes or cherry tomatoes for garnishing
Instructions:
- Cook pasta in boiling salted water until tender; drain and rinse with cold water.
- Combine dressing with wine vinegar, garlic, oregano, celery seed, basil, salt, and pepper; pour over pasta and toss until coated.
- Steam or cook broccoli until tender-crisp; drain well and set aside to cool.
- Stir green pepper, onion, and mayonnaise into pasta.
- Add broccoli and toss to blend ingredients. Add more mayonnaise, salt, and pepper if necessary.
- Sprinkle with parsley and garnish with radishes or cherry tomatoes. Serve chilled.
