FLORENTINE CHICKEN CASSEROLE RECIPE:
Ingredients:
- 2 (10 oz.) pkg. frozen chopped spinach
- 2 Tbsp. butter or margarine
- 6 Tbsp. flour
- 1 tsp. salt
- 1/8 to 1/4 tsp. cayenne pepper
- 1/2 c. dried bread crumbs (Italian)
- 3 c. milk
- 1 c. light cream
- 1/2 c. grated Parmesan cheese
- 4 c. cooked chicken (large cubes)
- 4 whole plump chicken breasts
Instructions:
- Cook spinach according to package directions; drain well. Arrange on bottom of a 3-quart casserole dish.
- Arrange chicken over spinach.
- In a saucepan, melt butter. Stir in flour, salt, and cayenne. Gradually stir in milk. Cook, stirring constantly, until mixture is thickened and comes to a boil.
- Add cheese and cream. Stir over low heat until cheese melts; pour over chicken.
- Sprinkle top with bread crumbs; dot with butter.
- Bake in a 350°F oven for 45 minutes.
- Let stand 10 to 15 minutes before serving.
- Serves 8. May be refrigerated a day ahead of time.
