FLORENTINE CHICKEN CASSEROLE RECIPE:

Ingredients:

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 2 Tbsp. butter or margarine
  • 6 Tbsp. flour
  • 1 tsp. salt
  • 1/8 to 1/4 tsp. cayenne pepper
  • 1/2 c. dried bread crumbs (Italian)
  • 3 c. milk
  • 1 c. light cream
  • 1/2 c. grated Parmesan cheese
  • 4 c. cooked chicken (large cubes)
  • 4 whole plump chicken breasts

Instructions:

  1. Cook spinach according to package directions; drain well. Arrange on bottom of a 3-quart casserole dish.
  2. Arrange chicken over spinach.
  3. In a saucepan, melt butter. Stir in flour, salt, and cayenne. Gradually stir in milk. Cook, stirring constantly, until mixture is thickened and comes to a boil.
  4. Add cheese and cream. Stir over low heat until cheese melts; pour over chicken.
  5. Sprinkle top with bread crumbs; dot with butter.
  6. Bake in a 350°F oven for 45 minutes.
  7. Let stand 10 to 15 minutes before serving.
  8. Serves 8. May be refrigerated a day ahead of time.
