FORGOTTEN SOUFFLE

FORGOTTEN SOUFFLE RECIPE:

Ingredients:

  • 8 to 10 slices white bread, crusts removed, remainder cubed
  • 3 cups grated Cheddar cheese
  • 2 cups broccoli florets, blanched
  • 1/2 cup chopped onion or chopped red or green pepper or 1 cup mushrooms, all sautéed in 1 to 2 tablespoons butter
  • 2 cups precooked ham, cubed
  • 12 eggs
  • 3 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions:

  1. Grease a 9 x 13 x 2 1/2-inch casserole dish.
  2. Cover the bottom with 2/3 of the bread cubes.
  3. Sprinkle on 1/2 of the grated cheese.
  4. Layer with ham, blanched broccoli, sautéed vegetables, and remaining bread cubes.
  5. Top with the remaining grated cheese.
  6. In a separate bowl, beat eggs, milk, salt, and pepper.
  7. Pour the egg mixture evenly over the casserole.
  8. Cover the casserole and refrigerate overnight.
  9. Bake at 350°F (175°C) for 35 to 40 minutes.
  10. Cover with foil during the last part of baking to avoid browning.
  11. Serve hot.
