FORGOTTEN SOUFFLE RECIPE:
Ingredients:
- 8 to 10 slices white bread, crusts removed, remainder cubed
- 3 cups grated Cheddar cheese
- 2 cups broccoli florets, blanched
- 1/2 cup chopped onion or chopped red or green pepper or 1 cup mushrooms, all sautéed in 1 to 2 tablespoons butter
- 2 cups precooked ham, cubed
- 12 eggs
- 3 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions:
- Grease a 9 x 13 x 2 1/2-inch casserole dish.
- Cover the bottom with 2/3 of the bread cubes.
- Sprinkle on 1/2 of the grated cheese.
- Layer with ham, blanched broccoli, sautéed vegetables, and remaining bread cubes.
- Top with the remaining grated cheese.
- In a separate bowl, beat eggs, milk, salt, and pepper.
- Pour the egg mixture evenly over the casserole.
- Cover the casserole and refrigerate overnight.
- Bake at 350°F (175°C) for 35 to 40 minutes.
- Cover with foil during the last part of baking to avoid browning.
- Serve hot.
