GREEK SALAD RECIPE:
Ingredients:
- 1/2 head iceberg lettuce
- 1/2 head romaine lettuce
- 2/3 c. crumbled Feta cheese
- 6 Kalamata olives
- 1/2 medium onion, sliced
- 1 1/2 medium cucumber, sliced
- 2 small tomatoes, cut into wedges
- 2 tsp. dried oregano
- 2 tsp. fresh minced parsley
- 1/3 c. olive oil
- 2 Tbsp. lemon juice
Instructions:
Combine the first 7 ingredients in a large salad bowl. In a small bowl, combine olive oil and lemon juice; beat with a wire whisk. Pour the dressing over the salad. Sprinkle with parsley, oregano, salt, and pepper. Gently toss the salad. Serve on individual salad plates. Serves 4.
