HASH BROWN OMELET

CHEESEBURGER SOUP RECIPE:

Ingredients:

  • 4 strips bacon
  • 2 cups frozen shredded hash browns
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped green pepper
  • 4 eggs
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1/4 cup milk
  • 1 cup grated Cheddar cheese

Instructions:

  1. Cook bacon in a 10-inch heavy skillet until crisp; remove and drain.
  2. Mix potatoes, onions, and green pepper.
  3. Cook over low heat in drippings until underside is crisp and brown.
  4. Blend eggs, milk, and seasonings.
  5. Pour over potatoes.
  6. Top with Cheddar cheese and crumbled bacon.
  7. Cook, covered, over low heat until eggs are set.
