Ingredients:
- 4 medium size potatoes (1 lb.)
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped green pepper
- 1/4 c. chopped onion

- 1/4 c. chopped fresh parsley
- 1 Tbsp. chopped pimento
- 2 hard-boiled eggs
Dressing:
- 3/4 c. nonfat yogurt
- 1 Tbsp. Dijon mustard
- 1 Tbsp. lemon juice
- 1 tsp. grated lemon rind
- 1/4 tsp. ground black pepper

- Peel potatoes and cut into quarters. Cook in boiling water until tender, about 15 to 20 minutes. Drain and cool to room temperature.
