Ingredients:

  • 4 medium size potatoes (1 lb.)
  • 1/2 c. finely chopped celery
  • 1/2 c. finely chopped green pepper
  • 1/4 c. chopped onion
  • 1/4 c. chopped dill pickle (or sweet)
  • 1/4 c. chopped fresh parsley
  • 1 Tbsp. chopped pimento
  • 2 hard-boiled eggs

Dressing:

  • 3/4 c. nonfat yogurt
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. lemon juice
  • 1 tsp. grated lemon rind
  • 1/4 tsp. ground black pepper

  1. Peel potatoes and cut into quarters. Cook in boiling water until tender, about 15 to 20 minutes. Drain and cool to room temperature.
