POTATO SOUP RECIPE:
Ingredients:
- 4 to 6 medium baking potatoes
- 1/4 c. margarine
- 2 Tbsp. flour
- 3 c. milk (skim)
- 1 to 2 cubes chicken bouillon
- Seasonings to taste
Instructions:
Bake potatoes in the microwave for 15 to 20 minutes. In a pan, melt margarine and add flour. In a saucepan, heat milk and chicken bouillon cubes until warm. Add flour and margarine mixture. Stir on low heat until thickens. When potatoes are done, cut and add to milk. You can leave the skins on if desired. Serve plain or with bacon and/or cheese on top. You may also add scallions.
