Vanilla Crème Brûlée
-Two Cups Of Heavy, Light, Or Half-and-half Cream (640-1600 Calories)
-One Lengthwise-split Vanilla Bean Or One Teaspoon Vanilla Extract (0-12 Calories)
-1/8 Teaspoon Of Salt (0 Calories)
-Five Egg Yolks (325 Calories)
-1/2 Cup Of Granulated Sugar, Plus Additional For Garnish (387 Calories)
Instructions:
1. Preheat the oven to 325°F. Combine the cream, vanilla bean, and salt in a saucepan and simmer over low heat until heated through. After a few minutes of sitting, remove the vanilla bean. (If adding vanilla extract, do it at this time.)
2. Beat yolks and sugar in a bowl until light. Pour the sugar-egg mixture into the cream and stir. Then, stir in about 1/4 of the vanilla cream. Pour into four 6-ounce ramekins, then set the ramekins in a baking dish and cover the sides of the dish with boiling water halfway up.
3. Bake for 30 to 40 minutes, until just set in the center. Let cool fully. Store in the refrigerator for a few hours or even several days.
4. When ready to serve, sprinkle a thin layer of sugar, approximately a teaspoon’s worth, over each custard.
5. Put the ramekins in the broiler, two to three inches away from the heat source. Activate the broiler. Simmer for about 5 minutes, or until sugar melts and begins to darken and even become black. Within two hours, serve.
