HEARTY BEAN AND BARLEY SOUP RECIPE:
Ingredients:
- 1 lb. large lima beans
- 3/4 c. barley
- 2 to 3 lb. beef marrow bones
- 5 qt. water
- 1 Tbsp. salt
- 3 large carrots
- 2 medium or 1 large onions
- 1 (16 oz.) can whole tomatoes with juice, diced
Instructions:
Put beans in a large pot and cover with water; bring to a rolling boil. Remove pot from the stove and allow beans to soak for 1 hour. Put 5 quarts water, bones, and salt in an 8-quart pot; bring to a boil. Lower heat to simmer, occasionally skimming the top. When beans are ready, drain, rinse, and add to the simmering soup. Add barley, onions, and carrots; simmer for 2 to 3 hours. Add tomatoes with juice; simmer for 1 hour, until the soup starts to thicken, stirring occasionally.
