HOT SPINACH DIP WITH PITA TOAST RECIPE:

Ingredients:

  • 1 Tbsp. jalapeno peppers, chopped
  • 3/4 c. onion, chopped
  • 2 tomatoes, chopped
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 8 oz. cream cheese
  • 1/3 c. half & half
  • 2 c. Monterey Jack cheese, shredded

Pita Toast:

  • 2 pita loaves (1 pkg.)
  • 2 tsp. lemon pepper
  • 2 tsp. cumin (ground)
  • 1/2 c. butter, melted

Instructions:

Preheat oven to 400°F. Grease an ovenproof dish. Mix all ingredients; pour into dish. Bake for 20 to 25 minutes or until bubbly. Serve with Pita Toast. Split pita loaves in halves. Combine lemon pepper and ground cumin. Spread pita with butter, then sprinkle with lemon pepper and ground cumin mixture. Broil until crisp. Serve immediately. Tortilla chips can be used as a substitute for pitas.
