SWEET AND SOUR PASTA

SWEET AND SOUR PASTA RECIPE:

Ingredients:

  • Chopped onions
  • Canned diced tomatoes
  • Eggplant, cubed
  • Chopped black olives
  • Chopped celery
  • 1/4 cup raisins, soaked in warm water
  • 2 tbsp. sugar
  • 2 tbsp. white wine vinegar
  • Noodles of your choice
  • Oil for sautéing

Instructions:

  1. Soak 1/4 cup raisins in warm water.
  2. Cut the vegetables into bite-sized pieces.
  3. Drain the soaked raisins and add them to the vegetables.
  4. Heat oil in a pan and sauté the vegetables until tender. Remove them from the pan and set aside.
  5. In the same pan, add 2 tablespoons of sugar. Stir until the sugar starts to melt and turns brown.
  6. Carefully add 2 tablespoons of white wine vinegar to the caramelized sugar.
  7. Return the sautéed vegetables to the pan and mix them with the sweet and sour sauce.
  8. Cook the noodles according to package instructions.
  9. Once the noodles are cooked, add them to the pan with the vegetables and sauce.
  10. Mix well until everything is evenly coated.
  11. Serve hot and enjoy!
