TOMATO TORTELLINI SOUP RECIPE:

Ingredients:

  • 6 strips bacon
  • 1 Tbsp. bacon drippings
  • 1/2 c. chopped onion
  • 2 tsp. garlic ‘n spice condiment
  • 1 (28 oz.) can crushed tomatoes
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 pinch of marjoram
  • 1 tsp. thyme
  • 2 Tbsp. tomato paste
  • 2 c. chicken broth
  • 1 (9 oz.) pkg. fresh cheese tortellini
  • 1 c. freshly grated Parmesan

Instructions:

In a large soup pot, cook bacon until crisp. Remove bacon and drain bacon drippings. Add onion and garlic to 1 tablespoon bacon drippings and sauté. Add tomatoes, herbs, tomato paste, and chicken broth. Bring to a boil. Stir in tortellini and simmer, uncovered, until tortellini is cooked. Serve warm and top with a sprinkling of Parmesan and cooked, crumbled bacon. Serves 8. Can be frozen.
