GARDEN PATCH PASTA SALAD RECIPE:

Ingredients:

  • 10 oz. vermicelli or other pasta (uncooked)
  • 1/4 c. Italian dressing or 2 Tbsp. olive or vegetable oil
  • 2 Tbsp. wine vinegar
  • 1 clove garlic, crushed or minced
  • 1 tsp. oregano leaves
  • 1 tsp. celery seed
  • 1/2 tsp. basil
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. fresh broccoli, chopped
  • 1 green pepper, chopped
  • 1/2 c. chopped red onion
  • 1 c. mayonnaise
  • 1 Tbsp. chopped fresh parsley
  • Radishes or cherry tomatoes for garnishing

Instructions:

  1. Cook pasta in boiling salted water until tender; drain and rinse with cold water.
  2. Combine dressing with wine vinegar, garlic, oregano, celery seed, basil, salt, and pepper; pour over pasta and toss until coated.
  3. Steam or cook broccoli until tender-crisp; drain well and set aside to cool.
  4. Stir green pepper, onion, and mayonnaise into pasta.
  5. Add broccoli and toss to blend ingredients. Add more mayonnaise, salt, and pepper if necessary.
  6. Sprinkle with parsley and garnish with radishes or cherry tomatoes. Serve chilled.
