GREEK SLAW

GREEK SLAW RECIPE:

Ingredients:

  • 2 (1 lb.) bags cole slaw mix
  • 1 cup oil
  • 1/2 cup red wine vinegar
  • 1 small jar pepperoncini, sliced very thin
  • Greek seasonings to taste (Cavender’s all-purpose Greek seasoning)
  • 1 to 2 cups Feta or Monterey Jack cheese
  • 1/2 onion, chopped
  • 1 large jar stuffed green olives
  • 1 large can black olives
  • 1 pint cherry tomatoes, halved

Instructions:

  1. In a large mixing bowl, combine cole slaw mix, sliced pepperoncini, chopped onion, stuffed green olives, and black olives.
  2. In a separate bowl, whisk together oil, red wine vinegar, and Greek seasonings to taste.
  3. Pour the dressing over the cole slaw mixture and toss until well coated.
  4. Add Feta or Monterey Jack cheese and toss gently to incorporate.
  5. Cover the bowl and refrigerate overnight to allow the flavors to meld.
  6. Just before serving, add halved cherry tomatoes and toss gently.
