MANDARIN ORANGE SALAD RECIPE:
Ingredients:
- 1/2 cup sliced almonds
- 3 Tbsp. sugar
- 1/2 head iceberg lettuce
- 1/2 head romaine lettuce
- 1 cup chopped celery
- 2 green onions
- 1/2 tsp. salt and pepper
- 1/4 cup oil
- 11 oz. mandarin oranges (add just prior to serving)
- 1 Tbsp. chopped parsley
- 2 Tbsp. sugar
- 2 Tbsp. vinegar
- Dash of Tabasco sauce
- 1/2 cup freeze-dried bananas (add just prior to serving)
- 1/2 cup sunflower seeds (add just prior to serving)
Instructions:
- In a frying pan over medium heat, cook almonds and 3 Tbsp. sugar until the almonds are coated. Cool and store.
- Mix the dressing ingredients: parsley, 2 Tbsp. sugar, vinegar, and Tabasco sauce. Chill.
- Combine iceberg lettuce, romaine lettuce, chopped celery, and green onions in a large bowl.
- Just before serving, add mandarin oranges, almonds, freeze-dried bananas, and sunflower seeds to the salad.
- Toss with the dressing and serve immediately.
