- 1/2 c. extra-virgin olive oil
- 4 Tbsp. Cavender’s Greek seasoning
- 6 Tbsp. lemon juice (2 fresh large lemons)
- 6 Tbsp. mayonnaise
- Salad shell noodles
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 2 green onions, sliced
- 1 can black sliced olives
- 1 small jar pimento
- 1 large breast of chicken, cooked and cut into bite-size chunks (or 2 lb. shrimp)
Instructions:
- Mix the extra-virgin olive oil, Cavender’s Greek seasoning, lemon juice, and mayonnaise together. Let it sit for 1 hour.
- Cook the salad shell noodles according to package instructions. Drain and cool.
- In a large bowl, combine the noodles, chopped red and yellow peppers, sliced green onions, black olives, and pimento.
