PASTA SALAD

PASTA SALAD RECIPE:

Ingredients:

  • 1/2 c. extra-virgin olive oil
  • 4 Tbsp. Cavender’s Greek seasoning
  • 6 Tbsp. lemon juice (2 fresh large lemons)
  • 6 Tbsp. mayonnaise
  • Salad shell noodles
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 2 green onions, sliced
  • 1 can black sliced olives
  • 1 small jar pimento
  • 1 large breast of chicken, cooked and cut into bite-size chunks (or 2 lb. shrimp)

Instructions:

  1. Mix the extra-virgin olive oil, Cavender’s Greek seasoning, lemon juice, and mayonnaise together. Let it sit for 1 hour.
  2. Cook the salad shell noodles according to package instructions. Drain and cool.
  3. In a large bowl, combine the noodles, chopped red and yellow peppers, sliced green onions, black olives, and pimento.
  4. Add the cooked chicken or shrimp.
  5. Pour the prepared sauce over the salad and mix well. Serve cold.
